Trehalose SG is a highly purified, low-endotoxin form of trehalose – a non-reducing disaccharide composed of two glucose molecules linked by an α,α–1,1 glycosidic bond. It appears as a white dihydrous crystalline powder, is highly soluble in water, and exhibits excellent heat resistance.
Its non-reactive nature prevents participation in the Maillard reaction, thereby avoiding the formation of unwanted colors, odors, and flavors during processing. With a high glass-transition temperature (~120 °C), Trehalose SG remains stable under high heat and acidic conditions, making it an effective stabilizer for biomaterials sensitive to environmental changes.
