Trehalose 100PH is a highly purified, pharmaceutical-grade trehalose produced in Japan. This non-reducing disaccharide consists of two glucose molecules linked by an α,α–1,1 glycosidic bond. It appears as a white dihydrous crystalline powder, is highly soluble in water, and exhibits exceptional stability under heat and acidic conditions.
Trehalose’s non-reducing nature prevents caramelization and Maillard reactions during processing or heat sterilization. Its low hygroscopicity ensures free-flowing properties even under high relative humidity, while its high glass-transition temperature (~120 °C) allows it to maintain a stable glassy state at elevated temperatures.
